Aromatic Soup
Nov. 24th, 2008 07:43 pmI like to keep a batch (or the makings) of custom-blended Thai coconut-ginger soup (tom ka gai) on hand in case of suddenly feeling like death on toast. The aromatics soothe my nasal passages, the chicken provides protein, the garlic and spinach I add help my immune system (or something...). Taste of Thai makes a soup base in paste form which keeps for months on my shelf. This week I was having a lot of trouble finding the soup base, and learned that Thai Kitchen makes a canned version, without chicken. Canned soup is Really Not My Favorite Food, but I was reassured when I opened the can and saw the chunks of lemon grass, chilies and ginger, so I modified it the way I like it.
